Recipe Ideas.

Here are a few recipe ideas, they are inspired by things I have eaten in restaurants had cooked for me by family or seen on television. I do not describe them in great detail or with quantities as I tend to make things up as I go along and alter them depending on what I have in the kitchen, how many I am cooking for or what mood I am in.

Bacon Hotpot

In a greased large flat dish (lasagne type) layer sliced onions, carrots and potatoes with bacon, season each layer, the top layer should be of potato. Gently pour in some stock, chicken or vegetable stock cubes seem to work well. Bake in the oven for an hour or so until the potato is cooked.

Great served with baked beans and tastes even better the next day so make plenty.

Spiced Pumpkin Soup

Fry the pumpkin (usually removed from the shell for a halloween lantern) in a splash of olive oil with some chopped garlic and onions. Add plenty of cumin powder and a little salt. When the pumpkin is browned nicely and softened add some stock of your choice. Simmer for 30 minutes or so then blend (I use a hand blender and leave a few lumps for that rustic texture) Serve with or with out a little double cream stirred in.

Thai Style Mushroom Salad

Slice sweet peppers, a fresh chilli, spring onions and some mushrooms mix in a serving bowl and sprinkle with some salted cashew or peanuts, and some torn fresh coriander leaves. Dress with a mix of oil (maybe olive or sunflower), fresh lime juice, pepper and a dash of soy sauce

Cucumber Salad

Well this is not really a salad but it brings back childhood memories. Slice some cucumber put it in a shallow dish and drown it in malt vinegar and some salt and pepper
